The end products of digestion of proteins are amino acids and that of starch is glucose.

In the buccal cavity, the starch is converted into Maltose(which is a disaccharide) by salivary amylase(ptyalin), and each maltose molecule is converted 2 molecules of glucose(which is a monosaccharide) by maltase in small intestine.
