Tomatoes are green when they are unripe because of chlorophyll pigment. When they start ripening, lycopene gains dominance over chlorophyll and turns them red; to put it simply the reddish-orange pigment takes over green the pigment.
You can pick them when they are green and leave them to ripen, but they may taste worse.
