We can convert vegetable oil to vegetable ghee through hydrogenation of oils.Vegetable oils are unsaturated compounds containing double bonds that are liquid at room temperature.Due to the presence of double bonds they undergo addition reaction with hydrogen to form saturated compounds called vegetable ghee or vanaspati ghee which are solid or semi-solid at room temperature.
This addition of hydrogen to vegetable oils forms vegetable ghee and hence this reaction is called hydrogenation of oils
