Maltose is simply two glucose molecules connected together. Fructosehas six carbon atoms, while glucose has five. It may not seem like a bigdifference, but chemically the difference is quite large. SMoore is correct - the only real similarity between HFCS and corn-derivedmaltose is that they both come from corn.
