The salt in the pickle makes the harmful bacteria’s to undergo exosmosis. As a result, bacteria's or spoiling micro organisms lose water and die and pickles are not spoiled. But this doesn’t occur in sambar.
Well the pickle will not get spoiled because it contains the salt and red chill powder a lot this a type of technique where the food it stored for long time so that it would not spoil or get attacked by the microorganism and get spoiled. But when we see the sambar we know that the sambar would get spoiled because there is no content in the sambar which can stop the growth of microorganisms in it. Therefore pickles don't spoil and sambar would spoil easily.
